A brand new Welsh dining experience has opened in Cardiff, restaurant and bar, ‘Tir a Môr’, at five-star voco St. David’s, Cardiff. Meaning ‘land and sea’ in Welsh, Tir a Môr celebrates the stunning local produce of Wales with a Welsh land and sea inspired menu.

Speaking about the opening of Tir a Môr, Graham Henderson, Head of Food & Beverage at voco St. David’s, Cardiff comments: “Tir a Môr very much puts us on Cardiff’s culinary map. Inspired by our amazing bayside location, Tir a Môr presents guests and visitors to voco St. David’s with the most incredible local ingredients and finest seasonal produce that Wales has to offer. Working together with David Woodford, our Executive Chef, we’ve combined David’s signature style with the country’s traditional culinary heritage; giving classic dishes modern interpretation and creating a menu of Welsh favourites, inspired by the land and sea of a nation we’re proud to be part of. We’re keen to champion the very best Wales has to offer, so have spent time with local suppliers at source – from Anglesey mussels and Menai oysters, to beef from Cefn Mawr Farms. Shellfish from the Menai Strait has a sweet flavour thanks to the phaeocystis algae that blooms in the Strait. The beef, from Douglas Willis, comes from a collective of regional farms within the parish of Cefn Mawr. These farms allow their traditional Welsh Black cattle to graze on native rough upland terrain, meaning the meat develops a unique character and well-developed flavour. Our whole team is passionate and knowledgeable about Tir a Môr, and together we deliver a truly impeccable Welsh dining experience.”
David and Graham have also collaborated on the drinks menu, using Graham’s experience as an award-winning bartender to shape the direction of Tir a Môr’s beverage offering. Their passion for whisky showcases the distilleries of Wales, and the spirits of the country heavily influence the signature cocktails. ‘Coctel sur Bara Brith’ (Bara Brith Sour) features Devil’s Bridge spiced rum; and the ‘Coctel Hen Ffasiwn myglyd’ (Smoked Old Fashioned) is made using Penderyn peated whisky.
Embracing its land and sea concept, the interior colour scheme and décor of Tir a Môr beautifully encapsulates its bayside location and exterior environment. Floor to ceiling windows, which lead on to a spectacular terrace, bathe the restaurant and bar in natural light. In fact, as the sunshine reflects on the wall colours and golden tone of the bar, a shimmer somewhat reminiscent of the stunning sea view, gives a glorious ‘wow’ factor dining experience.
In keeping with the local Welsh theme, the walls of Tir a Môr are adorned with contemporary artwork from Cardiff’s Blackwater Gallery – from two celebrated Welsh artists, Fran Williams and Adrian Thompson-Boyce. Fran’s powerful imaginary landscapes take inspiration from nature, the sea and sky; and her bold pieces perfectly complement the colour scheme. Adrian’s pieces reflect his love of music and art, and are a nod to the Welsh artists who have stayed at voco St. David’s, Cardiff over the years.
